Can you advise on shore tours ... Princess seems of offer little. We'll be on the 10/8 trip starting in Quebec.

My experience was with NCL, but I suspect that all cruise lines offer similar tours. And the same or similar tours are available for independent booking if you prefer. Since you will have three days in Quebec, that should be your best opportunity for seeing Autumn colors. Any tour that gets out into the countryside should be good for that. In Sydney I went to the Highland Herritage Village, and it was good but not great. In Halifax "everybody" goes to Peggy's Cove, and for good reason. The same is true of Arcadia National Park in Bar Harbor. that's about all I can do for you, but I'm sure others will have more suggestions and comments.
